This is a twist on Oh She Glows Banana Blueberry Spelt muffins.
Yields about 17 medium muffins, at 103 calories each.
Ingredients:
- 2 medium ripe bananas
- 1c almond milk
- 1/2c apple sauce
- 1 TBSP maple syrup
- dash apple cider vinegar
- dash vanilla extract
- 1/4c coconut oil
- 2c whole wheat flour
- 1.5 tsp cinnamon
- pinch salt
- 1 tsp baking soda
- 1.5 tsp baking powder
- 1c blueberries
- optional: 1/2 c chopped walnuts
Directions:
- Pre-heat oven at 350F
- Mash the bananas and add liquids
- In a separate bowl, mix the powders
- Add the powders to the liquid, combine quickly
- Fold in the fruits and nuts if using, combine lightly
- Drop a couple large soup spoons into muffins tins (fill about 3/4)
- Bake for 20-25 min
