Blueberry-Banana muffins

This is a twist on Oh She Glows Banana Blueberry Spelt muffins.

Yields about 17 medium muffins, at 103 calories each.

Ingredients:

  • 2 medium ripe bananas
  • 1c almond milk
  • 1/2c apple sauce
  • 1 TBSP maple syrup
  • dash apple cider vinegar
  • dash vanilla extract
  • 1/4c coconut oil

  • 2c whole wheat flour
  • 1.5 tsp cinnamon
  • pinch salt
  • 1 tsp baking soda
  • 1.5 tsp baking powder

  • 1c blueberries
  • optional: 1/2 c chopped walnuts

Directions:

  • Pre-heat oven at 350F
  • Mash the bananas and add liquids
  • In a separate bowl, mix the powders
  • Add the powders to the liquid, combine quickly
  • Fold in the fruits and nuts if using, combine lightly
  • Drop a couple large soup spoons into muffins tins (fill about 3/4)
  • Bake for 20-25 min
